Whole Wheat Couscous Salad with Chickpeas

If you know me, you know I love to create 1 or 2 grain salads in the beginning of the week! They make great additions for lunch, dinner and snacks when time is limited. This grain salad was a complete accident, as I originally set out to make a greek salad but had no tomatoes, peppers, oregano, feta and more!


This salad is refreshing and filling. Whole Wheat Giant Couscous has a great pasta-like consistency, compared to normal couscous. Add grilled chicken, halloumi, salmon, shrimp or falafel for a protein and fiber packed meal!
