Vegan Beet Pesto

It is no secret that I LOVE beets, with a beetroot burger and falafel recipes already on the blog! I love how vibrant beets are and how delicious they blend with so many other flavors. Additionally, beets are packed with vitamins, minerals and antioxidants. They also act as vasodilators, increasing the width of blood vessels, which increase the amount of blood and oxygen that can be transported throughout the body to the muscles and organs (great post-workout).

I created this beet pesto because it is the perfect way to use some fresh summer Basil and add some vibrancy to your food this summer. I truly believe, as humans, we eat with our eyes first. This pesto is not only pleasing to the eye, but it packs a lot of flavor!

Whole Wheat Pasta with Beet Pesto, Avocado, Arugula, Mushrooms and Zucchini

Enjoy this as a dip for veggies and pita, on a slice of toast with a fried egg, or added to your pasta of choice!

**Note: I use pre-roasted beets because they are an absolute time saver and I find peeling roasted beets to be very messy. If you prefer to roast your own, please allow time to do so!
