Gut Friendly Snickerdoodle Truffles

As you can tell from my recipes, I don't usually make sweet treats. I'm not much of a baker because I find that you really have to pay attention to measurements, which I often do not...


However, these truffles are NO BAKE! Instead, they only need to be chilled in the fridge, chocolate can be melted in the microwave and then put back in the fridge!

Gut Friendly Snickerdoodle Truffles

Prep Time: 10-15 Minutes

Chill Time: 1-2 Hours

Yield: ~10-12 Truffles


Ingredients:

1 Cup Almond Flour

1/2 Cup Nut Butter (I used sunflower butter)

1 Scoop Upliftfoods Daily Uplifter (use code THANKYOU for 20% off, not sponsored)

1 Tbs. Cinnamon

1 Tbs. Maple Syrup

1 Tbs. Coconut Oil

Pinch of Salt

1 Cup Dark Chocolate Chips + Dash of Coconut Oil


Directions:

1. Combine all ingredients (except chocolate) in a bowl and mix well. Use an ice cream scooper to roll identical balls onto a tray lined with parchment paper. Place tray in fridge for 1 hour

2. Microwave dark chocolate chips with a dash of coconut oil until liquid. I recommend microwaving for 15 seconds and then stirring until liquid, as to avoid burning the chocolate.

3. Remove truffles from the fridge. Dip in melted chocolate and place back on the parchment paper and put in the fridge for another hour. Eat once chocolate is hardened!
